Raising livestock has its rewards. Whether you’re trying to provide for healthier family eating or teaching your kids responsibility through a 4-H project, livestock is an important part of our Wisconsin heritage and your family legacy.

Yet, raising your animals is one thing...butchering and processing them is quite another. So, we make it our business to offer the area’s fairest pricing on custom processing for all types of livestock so you don’t feel the need to hassle with buying specialty tools or equipment…spending painstaking hours butchering, cutting, grinding, wrapping, and labeling meat…or disposing of all that waste once you’re done.

At Hickory Hills Country Meats, custom livestock processing is our specialty. It’s what we love to do…and do well. So if you’re considering slaughtering beef, hogs, lambs, goats, or other livestock, here are a few important things to remember:

  • Call ahead of time to schedule an appointment for your livestock to be processed. NOTE: Please be aware that our schedule books fast during the months of September through December due to both our annual County Fair and state deer hunting season.
  • You always get your meat back. Your livestock is kept separate from everyone else’s from start-to-finish. We process it separately, so you always get the meat back from the animal(s) you brought in.
  • Minimum quantity for processing. A minimum quantity of 15 lbs. is required in order to schedule processing of sausages or hot sticks.
  • Processing selection. Finally, you will need to communicate to us when you bring your animal(s) in of your processing choices from the following options:

** We suggest customers shear their sheep prior to bringing in their animal(s), as we would need to charge a higher fee to process unsheared sheep due to the considerable time required for added knife sharpening, housekeeping, and sanitation efforts.
